In a skillet, cook onion in 1/4 cup butter til tender. Stir in drained
mushrooms, crab meat, cracker crumbs, parsley, 1/2 teaspoon salt and a
dash pepper. Spread mixture over flounder fillets and roll them up.
Place a tooth pick to secure each piece. Lightly grease 12x7x2 inch
baking dish and place fillets seam side down.
In a saucepan, melt 3 tablespoons butter. Blend in flour and 1/4 teaspoon
salt. Add enough milk to mushroom liquid to make 1 1/2 cups. Add with
wine to saucepan. Cook until mixture thickens and begins to boil. Pour
over fillets.
Bake for 25 minutes at 400 degrees. Sprinkle with cheese and paprika and
return to oven for another 10 minutes or until fish flakes easily with
