Thaw spinach and squeeze free as much water as possible. Saute onion in 1
tablespoon of butter. Add scallions and cook until they wilt. Put aside.
In a large mixing bowl, beat eggs with a fork. Toss in onion and
scallions, feta, spinach, parsley, dill, salt and pepper; adding milk
alittle at a time.
With a pastry brush, coat bottom of a 11x7x2 inch baking dish with melted
butter. Line with approximately 6-8 sheets of phyllo dough. Spread
spinach mixture on phyllo dough. Do not trim overhanging sections. Line
with one sheet of phyllo brushing top with melted butter. Do this with
8-10 sheets, completing last layer with butter. Trim overlap on last
Score into squares or diamonds and bake 350 degrees oven for 45 minutes.
Let stand 10 minutes before serving.
