Preheat the oven to 350 degrees.
For the crust, place the graham cracker crumbs in a bowl and add the butter. Stir to combine.
Press the crumbs evenly over the bottom and sides of a 9-inch plate or pan. Bake the cust for 8 minutes. Let cool.
In a small bowl, squeeze limes to make 1/2 cup of juice.
Using an electric mixer, beat the egg yolks on high until thick. Approx. 1 minute. Beat in the milk, lime rind, juice and green food coloring.
Pour into the pre-baked pie crust and refrigerate until set, about 4 hours.
**Key limes come from Florida, but if they are not available, ordinary limes will do just as well.
