Title: Grilled Swordfish
Prepare outside grill or indoor broiler:
To prepare basil butter, combine first 5 ingredients in a food processor
or blender until smooth. Set aside.
To prepare sauce, heat oil in a saucepan over medium-high. Add onion and
2 garlic cloves and saute for 3 minutes. Add tomatoes and saute for two
minutes. Stir in wine, capers, vinegar and sugar and bring to a boil.
Reduce heat, simmer for 5 minutes, stirring occasionally. Stir in the
parsley. Set aside.
To prepare fish, sprinkle with salt and pepper. Lightly spray fish with
cooking spray and cook 5 minutes on each side depending on thickness.
Serve with sauce and basil butter.
