Title: Eggplant Sandwiches

In a bowl, combine garlic, bread crumbs, parsley and grating cheese. In
another bowl, beat an egg.
Take the eggplant and slice it like a piece of bread. Take a slice of
mozzarella cheese and ham and put between 2 slices of eggplant.
Dip in egg, then in dry ingredients; both sides.
Put on a greased cookie sheet (sprayed with pam). Use approximately a
spoonful of olive oil on top of sandwich. Place in oven 350 degrees for
1/2 hour or until eggplant is cooked.
