Title: Cuban Black Beans
Sort the beans, removing any small stones. Rinse and place the beans in a
container filled with water to cover. Add salt and soak overnight,
Discard the salted water and rinse the beans. Place them in a crock pot or
in a large pot over the stove adding fresh water to cover the beans and
add bell pepper, onion and garlic. Bring to boil. Lower the heat to
medium low and cook covered until the beans are tender; 1-2 hours.
Discard the pepper and onion.
Warm the olive oil in a skillte over medium heat. Saute' garlic for 1
minute, then add the onion and green pepper. Saute' for 3 minutes. Stir
in oregano, bay leaf and salt.
Stir the seasoning to the pot and boil. Lower heat and simmer 30 minutes.
Stir in the sugar and vinegar during the last 10 minutes of cooking.
Season to taste.
